O.K. so the boys returned today and I wanted to bake them something that would make the house smell wonderful, and say “Welcome Home” with out a lot of wordiness! As luck would have it, they walked into the house 5 minutes after I took the muffins out of the oven….still warm and fresh. And as luck wouldn’t have it the last one in was soooo mesmerized by the smell they forgot to shut the back door….each boy and hubba got a muffin, Boomer got 8 muffins. I shake my head!
Julie’s Sweet Banana Muffins
 No heavy vegetable oil to make these moist, so it’s more cake like than banana bread! The Boys like them, lots!
  • 2 ripe bananas, smashed
  • 1/2 cup applesauce(the 4ounce kids cups)
  • 1/3 cup melted butter
  • 1 cup sugar
  • 1 egg, beaten
  • 1 teaspoon vanilla (a little over)
  • 1 teaspoon baking soda
  • Pinch of salt(kosher)
  • 1 1/2 cups of all-purpose flour
  • Directions:
No need for a mixer for this recipe. Preheat the oven to 350°F . With a wooden spoon, mix butter into the mashed bananas and applesauce in a large mixing bowl. Mix in the sugar, egg, and vanilla. Sprinkle the baking soda and salt over the mixture and mix in. Add the flour last, mix. Pour mixture into cupcake tins sprayed with cooking spray. Bake for 25 minutes in our oven which runs hot, usually 30-35. Cool on a rack. Serve while warm. Makes 12.
