art swim football

Worked on getting the art project ready today, then hung out doing art in Nick’s class for two hours. After took Nick to swim. Finally, Friday Night Lights Flag Football. Pooped.



Joe LOVED sitting out there are 22 players so everyone sits out 2 quarters. He had a blast!

Nick is an offensive lineman and sometimes center….today he ran the ball. I happy screamed the whole time!

Football Pictures

Tony brought home his football pictures after practice today. I can’t believe how big he looks in his uniform. Zikes.

Hubba took Joe to Swim today and they practiced water safety. They had Joe throw the lifesaver pad thingie in and his instructor grabbed it, then he put the rope over his back and pulled her as hard as he could. Hubba said she looked like she was waterskiing, he was pulling so hard. They were laughing hard. All the other kids had to sit on their knees!

Bike Rodeo

The Bike Rodeo was today at the Elementary School. The boys were super excited. I thought it started right after school so we were early. Nick, Joe, Harrison, and Dane played on the playground until it started. Then they were off! So fun to watch the kids on two wheels!

Trying a new roast recipe

Pioneer Woman is on Food Network. And she had a Roast recipe this week… I already use a couple different roast recipes but, I’ve never done one in my dutch oven….so I’m given this one a try tomorrow!
Perfect Pot Roast

Ingredients
Salt and freshly ground black pepper
One 3 to 5-pound chuck roast
2 or 3 tablespoons olive oil
2 whole onions, peeled and halved
6 to 8 whole carrots, unpeeled, cut into 2-inch pieces
1 cup red wine, optional
3 cups beef broth
2 or 3 sprigs fresh rosemary
2 or 3 sprigs fresh thyme
Directions
Preheat the oven to 275 degrees F.
Generously salt and pepper the chuck roast.
Heat the olive oil in large pot or Dutch oven over medium-high heat. Add the halved onions to the pot, browning them on both sides. Remove the onions to a plate.
Throw the carrots into the same very hot pot and toss them around a bit until slightly browned, about a minute or so. Reserve the carrots with the onions.
If needed, add a bit more olive oil to the very hot pot. Place the meat in the pot and sear it for about a minute on all sides until it is nice and brown all over. Remove the roast to a plate.
With the burner still on high, use either red wine or beef broth (about 1 cup) to deglaze the pot, scraping the bottom with a whisk. Place the roast back into the pot and add enough beef stock to cover the meat halfway.
Add in the onions and the carrots, along with the fresh herbs.
Put the lid on, then roast for 3 hours for a 3-pound roast. For a 4 to 5-pound roast, plan on 4 hours. The roast is ready when it’s fall-apart tender.

flowers for me

I can’t remember the last time I got flowers, which makes these even more special! Each boy picked me flowers at different times this very day! Makes me feel pretty special.
