Baking Monday

Cinnamon Muffins 
 
  2 cups all-purpose flour
1/2 cup plus 2 tbsp. sugar, divided
2 tsp. baking powder
3/4 tsp. salt
1/4 lb. butter, cut into pieces
3/4 cup milk
1 egg
1 tsp. ground cinnamon
2 tbsp. butter, melted
Step 1 
Preheat oven to 400 degrees. Combine flour, 1/2 cup sugar, baking powder and salt in a medium bowl. Cut in butter with a pastry blender or two knives until mixture in crumbly and resembles small peas. Beat together milk and egg and add this to flour mixture, stirring just until combined. Do not overmix; batter will be lumpy.  

Step 2 
Divide batter among 12 paper-lined muffin cups. Bake 15 to 18 minutes, or until lightly browned. Remove from oven and cool 5 minutes. Remove muffins from tins and transfer to wire rack. 

Step 3 
Combine remaining 2 tablespoons sugar with the cinnamon. Brush tops of muffins with melted butter and sprinkle with sugar mixture. Serve warm. Makes 12 muffins. 

 

I added a teaspoon of cinnamon to the dry ingredients, because I have a cinnamon problem. I’m not sure where I got this recipe, it was an on line source. Nick said it was like Heaven, he said Joe thought so too, Tony gave an approving nod as did Hubba-bubba. It’s very biscuit like….kinda dryish it will go in the do again pile!
